[食譜] [泡麵大變身] 辣味炒泡麵
雖然冰箱常常做料理,但是隸屬阿宅一族的我,對於泡麵還是有一份很深的感情。除了唸書的時候,泡麵陪我度過一段不算短的歲月之外,因為工作上的需要常常穿梭在不同國度,行李箱裡面也是會帶著幾包泡麵,以防到當地發生吃不習慣的狀況。現在家裡擺幾包,也能當做「戰備糧」使用。
冰箱認為泡麵是台灣人上個世紀偉大的發明之一,雖然第一碗泡麵是日本貨,但也無法抹煞發明者是台灣人的事實,台灣好阿~~~~ 雖然泡麵的品質目前仍以發明國日本的產品最佳,不過台灣在泡麵的口味上真的可以算是世界第一。因為軟性調理包的出現,只有台灣泡麵可以吃到「真的肉」說... 有些比較嚴格的海關,看到台灣的泡麵還會沒收裡面的調理包呢。
雖然它真的不是什麼健康的食物,不過有的滋味真的是令人難以抗拒呀...... 雖然只是泡麵,不過也可以利用其他烹調方式變化一下。雖然這樣做會失去泡麵原本的方便性,但是速食的因子卻還是存在的。自己加點料,一個人也可以吃得很澎派呀!

[EN] Even though I cook often, as a bit of a homebody, I still have a deep affection for instant noodles. They got me through my student days, and because I often travel abroad for work, I always pack a few in my suitcase just in case I can't get used to the local food. Keeping a few packs at home serves perfectly as "emergency rations."
I consider instant noodles one of the greatest Taiwanese inventions of the last century. Although the first bowl was produced in Japan, the inventor was actually Taiwanese! While Japanese instant noodles might have the best overall quality, Taiwan is arguably number one when it comes to flavor—especially with the invention of retort pouches that contain real chunks of meat. Yes, it's not the healthiest food, but the taste is simply irresistible! By adding a few extra ingredients and changing the cooking method, you can turn a simple pack of instant noodles into a lavish meal for one.
食材準備清單與基底選擇
今天要做的炒泡麵,用的是味王原汁牛肉麵。這包大概是市面上最陽春的牛肉泡麵,連一點肉的影子都沒看到。不過整體來說,這包麵的味道不錯。原本什麼都沒有的缺點,反而讓這包麵可以成為很優秀的基底。在上面加點牛肉、雞蛋或青菜等等,效果就相當好。單單泡來吃止餓也不賴,所以冰箱每次到賣場都會順便補個幾包回來放著。
- 味王原汁牛肉麵:2 包
- 小白菜:2 棵
- 青蔥:2 根
- 老干媽辣醬:適量 (依個人喜好)

Today's fried instant noodles use Wei Wang Original Beef Noodles. It's probably the most basic beef instant noodle on the market—you won't see a single trace of actual meat. However, its straightforward flavor profile makes it an excellent blank canvas. Adding beef, eggs, or vegetables works wonderfully.
- Wei Wang Original Beef Noodles: 2 packs
- Bok choy: 2 stalks
- Scallions: 2 stalks
- Lao Gan Ma Spicy Chili Crisp: to taste
料理步驟圖解
這回試著用炒的,主要原因是要順便消化一些冰箱裡的青菜,沒想到效果還真不賴。
Step 1:泡軟麵條
將泡麵放在大碗裡面,用熱水泡開(不要泡太軟),然後瀝乾備用。
Step 2:爆香炒菜
平底鍋燒熱轉小火,將兩小包調味油包放進去。等到油稍微化開熱了,放進切碎的小白菜拌炒至半熟。
Step 3:加入麵條與調味
接著放進泡好的麵下鍋,用筷子將麵均勻翻動。如果麵太乾,可以加一點點泡麵剩下的熱水。等到菜差不多都熟了,將調味粉加入調味。
💡 小秘訣:因為是做成乾麵,所以調味粉大約加「一包半」左右即可,全加會太鹹!最後灑上蔥花,拌勻裝盤後,在麵上放兩茶匙的「老干媽辣醬」即可完美上桌。

2. Heat a frying pan over low heat and add the two seasoning oil packets from the noodles. Once the oil is hot and fragrant, add the chopped bok choy and stir-fry until half-cooked.
3. Toss the drained noodles into the pan and stir evenly with chopsticks. Add a splash of the noodle-soaking water if it gets too dry. Once the vegetables are cooked through, sprinkle in the seasoning powder. Tip: Since this is a dry stir-fry, only use about 1.5 packets of seasoning powder to avoid making it overly salty! Finally, garnish with chopped scallions, plate the noodles, and top with two teaspoons of Lao Gan Ma chili sauce.

吃的時候,就把底下的麵條跟上面的老干媽通通拌勻吧!老干媽的香辣與牛肉麵的基底真的超級對味,一下子兩包麵的份量就被我暴風吸入吃光光了~

【食譜】[西式] 蒜味香煎大干貝
這道香煎大干貝是上禮拜家裡請客時的隱藏料理,因為一開始冰箱忘記拿出來退冰,所以等到退冰完成,第一批客人已經離開了。
退完冰的干貝當然要馬上吃掉呀,所以後來它們就變成留下來的人喝酒的下酒菜囉,哈哈哈哈哈!!!
這次選用的是在 COSTCO 買的北海道生食級大干貝,也就是在日本料理店當生魚片吃的那種級數。一盒 999 元裡面約有 16~18 顆,個頭都相當大。算一算一顆成本差不多 60 多塊,還挺划算的,因為這種干貝在日本料理店吃,一顆沒跟你收個幾百塊是不可能的。ANYWAY,就趕緊來看看這道簡單的香煎干貝,我也順便交交作業!

I actually forgot to thaw them out initially, so by the time they were ready, the first batch of guests had already left. Of course, thawed scallops must be eaten right away, so they turned into the perfect drinking snack for those who stayed behind! Hahaha!
I used Hokkaido sashimi-grade large scallops from Costco—the exact same quality you'd eat raw at a high-end Japanese restaurant. A box cost 999 TWD and contained about 16 to 18 massive scallops. That’s roughly 60 TWD per piece, which is a fantastic deal compared to restaurant prices. Anyway, let's check out this super simple recipe!

Step 3:調味點綴
最後在干貝上灑上全部的調味料即可,注意干貝本身就有海水鹹度,海鹽千萬別放太多!

試作心得與下酒絕配
這樣的烹調方式,完全可以吃到屬於干貝本身的鮮味跟甜味。調味料在這邊只是類似中藥的「藥引」,是為了把原味給帶出來。
煎得焦香的干貝,拿來下酒真的是又好吃又華麗呀。重點是無敵簡單,又是一道會燒開水就會做的料理,因為慢火煎干貝不需要太去理會它。冰箱可是一邊料理,一邊在廚房中島跟朋友把酒言歡咧。

【食譜】[西式] 英式烤牛肉+烤松阪豬
上禮拜六冰箱請朋友來家裡面吃晚餐,理由是這一ㄊㄨㄚ已經積欠很久。出來跑,總是要還的...哈哈哈!
其實這次的晚宴前冰箱自己很 HIGH,因為終於有機會可以做「整條」的英式烤牛肉來吃囉!沒辦法,阿德不吃牛肉,所以平常自己在家做只會把自己撐死,可能烤一次會 3 個月不敢吃牛排...朋友到家裡來是最好的機會,三兩下就可以把一條牛肉吃完囉,哈哈!
當晚冰箱開的菜單是:生菜沙拉佐白松露檸檬油醋、奶油白馬鈴薯泥、香蒜麵包、英式烤牛肉以及阿德專屬的烤松坂豬。本來還有準備 COSTCO 買的北海道生食級大干貝準備來煎,但是因為太忙忘記拿出來退冰,所以正餐就沒有上了,反而變成餐後的下酒好料 XD
因為一個人在廚房太忙,後來又忙著招呼客人,所以成品照片冰箱沒拍幾張。還好有人幫我拍下來,請大家多多包涵,也謝謝幫我拍照的朋友。

[EN] Last Saturday, I invited some friends over for dinner—a long-overdue gathering. As they say, what goes around comes around... hahaha!
I was actually super excited before the dinner party because I finally had the excuse to cook a whole English Roast Beef! My wife, A-De, doesn't eat beef, so if I roasted a whole chunk just for myself, I'd probably get so stuffed I wouldn't want steak for another three months. Having friends over is the perfect opportunity to finish a whole roast in no time!
My menu for the night: Salad with White Truffle Lemon Vinaigrette, Creamy Mashed Potatoes, Garlic Bread, English Roast Beef, and Roasted Matsusaka Pork (specifically for A-De). I was so busy cooking and hosting that I didn't take many photos. Thankfully, a friend snapped a few for me, so please excuse the picture quality!
