季節一到,市場上常常會出現一些奇奇怪怪的食材。其實也不能說是奇怪,應該說比較少見,所以會多怪。以往這種大章魚腳只能在像基隆廟口那種夜市吃到,不然就是要到觀光魚市才有得買,不過我們家附近的超市有時候會鋪貨,剛好看到就給他帶回家試做看看。
這種大章魚其實味道比較腥一點,所以如果單純汆燙來吃可能會讓人食不下嚥,因此,比較重口味的燒法有其必要性。烹調過程中加入大量的香辛料如蒜苗、辣椒、薑絲及醬油加酸菜一起燒,最後再加入少許白醋提味其實就會很好吃了。
When the season arrives, bizarre ingredients often appear in the market. Well, not exactly bizarre, but rather uncommon, which makes them seem strange. In the past, you could only eat this kind of giant octopus tentacle at night markets like Keelung Miaokou or buy it at tourist fish markets. However, the supermarket near our house occasionally stocks it. I happened to see it, so I brought it home to try cooking it.
This giant octopus actually has a stronger fishy smell, so simply blanching it might be hard to swallow. Therefore, a heavier flavored cooking method is necessary. Adding a large amount of spices like garlic sprouts, chili peppers, shredded ginger, soy sauce, and pickled mustard greens during the cooking process, and finally adding a little white vinegar to enhance the flavor, will actually make it very delicious.
吃起來酸酸甜甜,帶點酸菜及蒜苗香味的感覺。雖然章魚的口感會比較偏韌,但是因為是切薄片,所以反而有另一種充滿嚼勁的感受。同樣的配方也可以應用在其他類似食材,如花枝或小卷,一樣好吃喔。
