懶人肉燥飯+滷蛋+滷油豆腐+燙青菜
在國外的日子,如果能吃到一碗充滿台灣味的肉燥飯,人生也真的沒有遺憾了唷~~~ 肉燥飯我已經煮過好多次了,其實作法真的不難。
上禮拜天下飛機時去超市採買,發現有賣跟我們台灣一樣的圓米,於是就秤了一些回家。有了米,當然要做跟米最搭的配料,所以也順便帶了一點豬絞肉回來。我之前就說過了,菲律賓的豬肉有腥羶味,奇怪的是絞肉卻沒有?菲律賓早期有許多華人從福建、廣東來這邊開墾,也就是以前的人說的「下南洋」,其中又以福建人為大宗。因此,菲律賓人日常飲食中的許多東西,其實跟我們是雷同的。
舉個例子來說,菲國人也吃醬油,而菲律賓話的醬油發音就類似台語的醬油一樣,鑰匙、米粉等等也是,因為這些都是華人帶過來的。寫這麼多其實就是要告訴各位,中式調味料在菲國是很方便買的。在 SM 的超市甚至有貨架專門放台灣、泰國、日本、韓國等等的調味料或食材,並不需要大老遠跑到馬尼拉的王濱 (中國城) 去買。
這回我是一下飛機在機場附近的 SM ASIA 的超市補貨回家的。SM ASIA 位於 PASAY CITY,建築在一片海埔新生地上,是菲律賓全境最大的百貨商城。也因此,這裡附設的超市裡面供應的食材就比較齊全,一些調味料在這裡都找得到。魚、肉海鮮類在這邊也相對的比較新鮮跟選擇性多。這次我在賣場內看到 LOCAL 做的油豆腐,也順便帶了一包回家。

Living abroad, nothing cures homesickness quite like a bowl of authentic Taiwanese Braised Minced Pork Rice (Rouzao Fan). It's actually not hard to make at all!
After landing in the Philippines last Sunday, I went grocery shopping at SM Mall of Asia (the largest mall in the country, located in Pasay City). I found short-grain rice just like the one we have in Taiwan, so I bought some. Since I had the perfect rice, I needed the perfect topping, so I picked up some minced pork.
Due to the historical migration of Chinese people (mainly from Fujian) to the Philippines, many local food habits and ingredients are surprisingly similar to ours. For instance, the Tagalog words for soy sauce and rice noodles sound just like the Taiwanese Hokkien words! Because of this influence, it's very easy to find Chinese, Taiwanese, and other Asian seasonings in regular local supermarkets without having to travel all the way to Manila's Chinatown.
ANYWAY,寫一堆相信大家都餓了,馬上就來複習一下這鍋「濕式肉燥」的做法!
準備材料 (Ingredients)
🛒 主要食材
- 豬絞肉 (Minced Pork): 約 500g
- 油蔥酥 (Fried Shallots): 兩大把
- 蒜頭 (Garlic): 1 大顆 (剝瓣、去皮切塊)
- 油豆腐 (Tofu Puffs): 隨意
- 去殼白煮蛋 (Hard-boiled Eggs): 隨意
🧂 調味料
- 米酒 (Rice Wine): 1 大匙
- 醬油 (Soy Sauce): 約 100 c.c.
- 紅糖 (Brown Sugar): 2 匙
- 白胡椒粉 (White Pepper): 適量
- 清水 (Water): 約 600 c.c.
作法步驟 (Instructions)

爆香與炒肉:在鍋內放進約三大匙的油,用文火燒熱後,先爆香蒜頭。等到蒜頭變成金黃色有香味出來時,下豬絞肉翻炒。等豬肉變白之後,嗆一下米酒,然後灑上白胡椒粉。
(Heat about 3 tbsp of oil in a pot over low heat and sauté the garlic. Once the garlic turns golden and fragrant, add the minced pork and stir-fry. When the pork turns white, deglaze with rice wine and sprinkle with white pepper.) -
調味與燉煮:接著,放下油蔥酥一起炒一下,然後下醬油跟紅糖。隨後加水約 600 c.c.,丟下油豆腐及白煮蛋,蓋鍋蓋用小火慢慢的燉約 40 分鐘即可。
(Add the fried shallots and stir. Pour in the soy sauce and brown sugar. Add about 600cc of water, then drop in the tofu puffs and hard-boiled eggs. Cover the pot and simmer over low heat for about 40 minutes.)
建議可以用小火慢慢的燉,燉越久越香,滷蛋跟油豆腐也會更加吸滿湯汁入味喔!
成果與心得分享 (Conclusion)
肉燥做好,不只是拿來拌飯,亦可拿來煮麵或燙青菜等等,用途很廣!強烈建議在異鄉的遊子們一定要把這道學起來,因為材料取得容易,需要的材料除了某些地區沒有賣醬油之外,其他應該都可以買到。想家的時候,就幫自己滷一鍋肉燥吧!!

Once the braised minced pork is done, it's incredibly versatile! Besides pouring it over rice, you can use it to flavor noodles or blanched vegetables. I highly recommend that all expats learn this recipe because the ingredients are very easy to find. Whenever you're feeling homesick, just braise a pot of this comforting Taiwanese minced pork!
