【食譜】[中式] 魷魚醬燒肉

金鉤蝦香蔥煎蛋(YAHOO首頁文)
朋友送我自己種的有機蔥,雖然每根短短小小的,但是那蔥味真的有夠香。這種好物,拿來煎蛋最棒了!
冰箱裡面剛好有之前買回來的澎湖金鉤蝦米,在腦中跑一次空槍(想像一下味道),感覺味道應該很搭,所以就變出來這道煎蛋料理囉!

A friend gifted me some homegrown organic scallions. Although they are short and small, their aroma is incredibly fragrant. Quality ingredients like this are absolutely perfect for an omelet!
I happened to have some premium Penghu dried shrimp (Jingou shrimp) in the fridge. I did a quick mental run-through of the flavor profile, felt that it would be a fantastic match, and so this omelet dish was born!
準備材料 (Ingredients)
🛒 主要食材
- 金鉤蝦或蝦米 (Dried Shrimp): 1 把
- 青蔥 (Scallions): 2 根
- 蛋 (Eggs): 4 顆
🧂 調味料
- 雞粉 (Chicken Powder): 1 茶匙
- 鮮奶 (Fresh Milk): 1 大匙 (讓蛋更滑嫩的小秘訣)
作法步驟 (Instructions)

備料與打蛋:將金鉤蝦用熱水泡軟後切碎,青蔥切成蔥花備用。接著將所有材料放入碗裡打勻。
(Soak the dried shrimp in hot water until soft, then chop them finely. Chop the scallions. Beat all the ingredients together in a bowl.) -
下鍋鋪平:接下來就照之前「日式煎蛋」的步驟來做,先在熱鍋中打上薄薄一層蛋液。
(Follow the steps for making a Japanese rolled omelet (Tamagoyaki). First, pour a thin layer of the egg mixture into the heated, oiled pan.)

向內捲起:等蛋皮半熟時,從外向內將蛋皮捲起。
(When the egg layer is half-cooked, roll the omelet from the outside toward the inside of the pan.) -
反覆堆疊:將捲好的蛋皮由內推到外緣,繼續倒入薄薄蛋汁,反覆此動作直到達到想要的厚度。
(Push the rolled egg to the outer edge, pour another thin layer of egg mixture, and repeat this rolling process until you reach the desired thickness.)

鍋邊整型:最後,將煎蛋靠在鍋邊稍微整型、定型後即完成。
(Finally, press the omelet against the edge of the pan to shape it neatly. It's done!)
這種加了豐富配料的蛋汁,每次要下鍋前記得要先攪拌過,不然蝦米跟蔥花等好料都會沉在碗底喔!

放涼之後再用刀子切片裝盤,不管是熱熱吃配飯,還是放涼了當作便當菜都超級適合!

💡 Chef's Tip: For an egg mixture with lots of ingredients like this, remember to stir it well right before pouring each layer into the pan. Otherwise, all the delicious dried shrimp and scallions will sink to the bottom of the bowl!
Let the omelet cool slightly before slicing it with a knife and plating it. It's fantastic served hot with rice, and it makes an absolutely perfect side dish for a bento box even when it's cold!
