This Chicken Tomato Vegetable Soup is one of the classic Western soups. Probably every household has its own family recipe. Ingredients are sautéed first to release their aroma before adding water to simmer. The essence of the meat and vegetables is infused into the soup, making it full of flavor and highly nutritious. The slightly sour taste of the tomatoes not only adds flavor but also makes the soup taste more refreshing. It's not hard to make, so let's check out the recipe together!
準備材料 (Ingredients)

- 雞胸肉 (Chicken Breast): 4 片
- 高麗菜 (Cabbage): 1/4 顆
- 洋蔥 (Onion): 1 顆
- 胡蘿蔔 (Carrot): 1 根
- 馬鈴薯 (Potato): 1 顆
- 芹菜 (Celery): 4 根
- 牛番茄 (Tomatoes): 2 顆
- 番茄汁 (Tomato Juice): 1 瓶
- 雞湯 (Chicken Broth): 1 罐
- 番茄醬 (Ketchup): 1/2 杯
- 粗黑胡椒粉 (Coarse Black Pepper): 少許
- 乾燥巴西里 (Dried Parsley): 少許
- 鹽 (Salt): 少許
作法步驟 (Instructions)

炒香洋蔥:平底鍋內放油,先將洋蔥下鍋之後,將電磁爐火力開到最大炒洋蔥。
(Add oil to a frying pan. Add the onions and stir-fry them using the highest heat on the induction cooker.)

加入番茄與胡蘿蔔:接著將去皮番茄丁及胡蘿蔔丁下鍋一起炒。
(Next, add the diced peeled tomatoes and diced carrots into the pan and stir-fry together.)

加入雞肉:雞胸肉切丁之後也跟著下鍋,撒上少許黑胡椒。
(Add the diced chicken breast into the pan and sprinkle with a little black pepper.) -
加入高麗菜與調味:接著是切碎的高麗菜下鍋,炒軟後加入番茄醬及乾燥巴西里拌炒。

換鍋燉煮:將平底鍋的料換到湯鍋。倒入雞湯,拌勻之後加水加至湯鍋約七分滿,然後煮沸之後開中火續滾。
(Transfer the ingredients from the frying pan to a soup pot. Pour in the chicken broth, mix well, and add water until the pot is about 70% full. Bring to a boil, then reduce to medium heat and let it simmer.)

最後調味:差不多滾至雞肉熟度口感可以接受時,放入芹菜段攪勻,此時用鹽及番茄醬做最後的風味調整,即可關火。
(When the chicken reaches your desired tenderness, stir in the celery pieces. At this point, adjust the final flavor with salt and ketchup as needed, then turn off the heat.)
