我相信很多人本來不常煮,是偶爾為了方便才開始動手,所以多少對下廚這件事情沒啥信心。其實不要這樣想,只要善用科技控制好時間,不管是烤箱、電鍋、微波爐等等,都可以讓人人變食神。

料理小秘訣 (Cooking Tips)
柳葉魚又有俗名「喜相逢」,一般大家吃到的版本不是裹粉油炸就是燒烤。因為這個魚基本上都是冷凍貨,冷凍的魚貨難免鮮度會流失一點,所以補強的方法就是用一點點味精。如果不喜歡或不能吃味精的,則建議大家可以放一點**醬鳳梨**或是**破布子**代替也行。如果加上述兩樣,那鹽巴就可以酌量或是不放,以免過鹹。
做這道菜前,請先研究一下府上的微波爐功率是幾 W(一般來說會寫在面板上)。以我家這台是 1100W 來說,做這道菜切中火(約 550W),微波只要 1 分 40 秒就可以了。你沒看錯,就是這麼快,備料都還比烹調時間久,但 5 分鐘一定可上菜!
準備材料 (Ingredients)

- 柳葉魚 (Shishamo / Willow Leaf Fish): 6 尾
- 薑絲 (Shredded Ginger): 少許
- 蒜泥 (Minced Garlic): 少許
- 蔥花 (Chopped Scallions): 少許
🧂 調味料
- 鹽 (Salt): 適量
- 味精 (MSG): 適量 (可替換為醬鳳梨或破布子)
- 香油 (Sesame Oil): 適量
- 米酒 (Rice Wine): 適量
作法步驟 (Instructions)

盤底鋪料:取一可微波淺盤,先在盤上鋪上薑絲,然後淋少許香油後,將魚依序排好。
(Take a microwave-safe shallow plate. Spread some shredded ginger on the bottom, drizzle with a little sesame oil, and arrange the fish in order.) -
頂部鋪料:接著在魚上面再放上薑絲、蒜泥、蔥花。
(Next, top the fish with more shredded ginger, minced garlic, and chopped scallions.) -
調味:以鹽、味精調味,然後再灑上一點香油、米酒。
(Season with salt and MSG, then sprinkle with a little more sesame oil and rice wine.) -
微波加熱:用保鮮膜將盤子封實,以 550W 火力微波約 1 分 45 秒左右即可。(微波參數僅供參考,請依府上微波爐功率斟酌)
(Seal the plate tightly with plastic wrap and microwave at 550W for about 1 minute and 45 seconds. Adjust the time based on your microwave's wattage.) -
小心取出:從微波爐取出時,請注意高溫蒸氣,不要燙到手。
(Carefully remove it from the microwave, being cautious of the hot steam so you don't burn your hands.)
成果與心得 (Conclusion)
真的善用科技就是無敵快,不會燒開水的也能做。吃柳葉魚最怕煮後魚蛋沒熟透,大家看微波爐的功力是這樣,就別擔心了!
有人可能會擔心保鮮膜受熱之後會產生塑化劑的問題。其實只要選用耐高溫、無塑化劑的微波專用保鮮膜即可。但如果還是擔心的話,可以用另外一個盤或碗當蓋子倒扣即可,不過這樣子的方式密封性比較差,所以烹調時間可能必須要做一點延長調整。

⚠️ Safety Note: Some might worry about plasticizers when heating plastic wrap. You can use microwave-safe wrap, or if you're still concerned, simply use another plate or bowl upside down as a lid. However, the seal won't be as tight, so you might need to slightly increase the cooking time.
